Her female-led team produce more than 20 varieties of micro herbs, edible flowers and zucchini blossoms that are sold through Sydney Markets and direct to leading Australian restaurants. About Gourmet Herbs
Jane Vassallo founded Gourmet Herbs in 2003. A fourth-generation farmer, Vassallo inherited her family's love for life on the farm. In the early 1990s, she moved from the lowlands of the Hawkesbury to establish a new farm on higher ground, paving the way for what later became Gourmet Herbs. Originally focused on growing fancy lettuces, Vassallo soon pivoted to meet a niche demand from contemporary Sydney restauranteurs for microherbs and edible flowers.
